Move over for these muesli bars


Here we go, one of the most common snacks out there. Often filled with bad ingredients and are pretty pricey. What is this snack you ask? The mighty muesli bar. Easiest snack to take to school or work and should leave you full and give you energy. So with all the junk on the supermarket shelves, why not make your own muesli bars?! They are yummy, healthy, quick and cheaper than most muesli bars in the supermarkets. There is no reason not to make them :)

You can pretty much put whatever you want in them, one type of nut or seed or a mixture. This recipe is yours. I make up a big batch and give them to Brayden for work, he stays they keep him full for ages, yay! I take them with me as a snack if i think I’m going to get hungry, or I enjoy them with a smoothie of chai latte. Almond butter is super yummy on them as is dark chocolate if you want your choc fix.

They freeze really well and taste great hot or cold. The kitchen smells amazing when they are baking! Worth making them just for that smell. Its too hot to turn the oven on at the moment, so i’ve been making some raw brownies and am dreaming of a beetroot, carrot, ginger juice. mmmmmmmm.

Makes 8 big bars or 16 little ones
3 cups of oats
1/2 cup of chopped almonds / chopped walnuts / chopped hazelnuts
1/2 cup of pumpkin seeds / sunflower seeds
1/4 cup of toasted sesame seeds
1/4 cup of sultanas / goji berries / cranberries
½ cup LSA – (ground linseed + almonds + sunflower seed) ( Can be found in the Macro section of Woolworths)
3 eggs
1 teaspoon vanilla extract
½ teaspoon cinnamon
1/4 cup olive oil / coconut oil / rice bran oil
1/4 cup honey / maple syrup

Optional extras:
cacao nibs / 70 – 85% dark choc pieces / coconut flakes

Preheat oven to 160 C, fan forced
Combine the oats, nuts, seeds, LSA, eggs, vanilla, cinnamon, oil and honey in one large bowl until mixed
Place into a lined baking tin
Bake for 25 – 30 minutes, it should look golden
Cool then cut into pieces
