Vicky is one of my favourite faces to see, bubbly, happy, friendly, energetic and the list goes on. Her smile is purely infectious. I always believe that everyone would be a little bit better with Vicky in their lives so here is your injection of inspiration 🙂 I couldn’t think of anyone more perfect to start the new year off with on the blog. I could rave about this lettuce all day but I’m going to save that for another post. In saying that it is hands down the best, freshest, crisp lettuce I have ever eaten! One of the many foods that is going to get me through this hot Australian summer.
Now, tempeh. My new favourite thing to incorporate in my diet. My wonderful yoga teacher put me onto it and now I’m hooked. It’s usually made form fermented soybeans, but their are versions of other beans out there. e.g. chickpea or fava beans.
I love the nutty firm texture plus it is high in protein, copper, manganese, riboflavin and niacin ✔✔✔✔✔
Oh it’s good to be back!!! I’m beyond happy to have time to blog again. Uni is done for the year and now the fun begins.
And to top that, I was/am Loving Earths featured foodie for November. I’m still pinching myself because this was a huge goal for me and I’m so happy with the recipes that my brain came up with, and having myself and friends taste test I can guarantee they are delicious. They are all on the Loving Earth website >> Caramelised buckini popsicles, Cookie Slice, Choc, Mandarin tarts, Neapolitan Ice cream cake, Sunday Smoothie. Arghh, I love them all so much but in saying that the popsicles will be found 24/7 in my freezer this summer ☼
